A Sichuan snack of boiled wontons dressed with a sauce based on chilli oil. In Sichuan wontons are called 抄手, and their wrappers are thinner, smoother and smaller than many other wontons.
Where it comes from
Wikipedia gives the dish as a Sichuan snack, with Chengdu's Long Chao Shou the best-known name.
How it is made
Fresh pork wontons are boiled, drained and dressed with chilli oil. Garnishes vary. At Hei Chien in Kaohsiung the bowl also has pickled mustard tuber, shredded ginger, spring onion, sesame oil, lard and a little broth.
How to eat it
It makes a snack or light meal. You can ask for it without chilli, and a splash of black vinegar cuts the richness.
In Kaohsiung
Hei Chien Wenzhou Wonton King is one of three long-running wonton shops in Kaohsiung's Yancheng district. A UDN writer reports that the three are said to come from the same master, so their wontons taste alike.
