What it is

A clear broth with fresh fish. In Tainan the fish is often milkfish, and the head is a favourite. Chan Chi's house version combines sea bass bones, clams, sliced fish and vegetables.

How it is made

Heads and bones are simmered slowly, which gives the broth a natural sweetness, and the fish is added fresh.

How to eat it

Order it with rice and a plate or two of fish cooked other ways. At png-toh-a (飯桌仔) canteens such as Chan Chi, dishes are laid out buffet-style and cooked to order.

In Kaohsiung

Wikipedia notes that milkfish soup is a speciality of southern Taiwan.
