What it is

Braised pork trotter served with noodles. The best-known form is 豬腳麵線, trotter with thin wheat vermicelli. Noodle shops also serve trotter over dry-tossed noodles that soak up the braising sauce.

Where it comes from

In Taiwan, long noodles stand for long life and pork trotter for strength and plenty. So 豬腳麵線 is eaten on birthdays and to shake off bad luck after hard times, such as leaving hospital or prison.

How it is made

The trotters are braised until tender, then served on noodles with their sauce.

How to eat it

Dry (拌) or in soup, the job is the same: work the meat and skin off the bones.

In Kaohsiung

TVBS says many regulars at Gang Yuan Beef Noodles in Kaohsiung's Yancheng prefer the springy pork trotter dry noodles to the beef. It adds that they often sell out before 7 pm on weekdays.
