What it is

Thin rice vermicelli stir-fried with shredded pumpkin. The pumpkin flavour is strong but the dish is not oily, and the pumpkin should hold its shape rather than turn mushy.

How it is made

Shredded pumpkin and thin rice noodles are stir-fried together until the noodles are springy and the pumpkin is just soft.

How to eat it

Share a plate alongside seafood, such as a steamed fish of the day.

In Kaohsiung

Haibin, a 30-plus-year-old family restaurant by the Zhongzhou ferry pier on Cijin island, counts pumpkin rice noodles among its signatures. Seafood is the main draw on the island.
