How it is made

Zhu-Ji in Tainan uses four-month-old ducks from Neipu in Pingtung County, delivered fresh each day, and either boils or smokes them. At Ya Rou Zhen in Kaohsiung, a dedicated station by the counter chops the duck.

How to eat it

Share a plate at the table, next to duck rice. Go early to Zhu-Ji: the smoked duck tends to sell out around lunchtime.

In Kaohsiung

Zhu-Ji has sold sliced duck since 1942. At Ya Rou Zhen in Yancheng, you order at the counter by the entrance and sit in the arcade. The duck rice there comes with a minced pork sauce.
