What it is

A home-style stir-fry of goat and bitter melon. At Joes, the owner buys goats every day and butchers them on site. The dish is one of the stir-fries ordered alongside the herbal goat soup and hot pot these shops are famous for.

How it is made

Sliced goat is stir-fried with bitter melon in a hot wok. Gangshan shops such as Joes buy goats daily and butcher them on site. TVBS reports that local restaurants use castrated male goats slaughtered that day, which are leaner than imported goat.

How to eat it

Share it as a side with goat soup or goat hot pot and rice. Joes offers its dishes in three portion sizes.

In Kaohsiung

Gangshan is one of Kaohsiung's 'three mountains' food towns, with dozens of goat restaurants. It is also known for honey and broad bean paste. Michelin recommends the bitter melon stir-fry at Joes (舊市羊肉).
