What it is

Tofu cooked in the same kind of soy-based braising liquid used for Taiwanese 滷味 (lu wei). It turns soft and juicy and absorbs the flavour of the pot.

How it is made

Braising stocks of this kind are built on soy sauce, spring onion, ginger, rice wine and rock sugar, often with star anise and other spices. The tofu sits in the stock until it soaks it up.

How to eat it

It is cheap, so add a piece or two to a bowl of braised pork rice or minced pork rice.

In Kaohsiung

Michelin and regulars both recommend the soft braised tofu at Cianjin Braised Pork Rice in Kaohsiung, and Nan Feng sells it by the piece.
