Mixed pork offal soup
綜合豬雜湯
Also called: 綜合湯 · 綜合肉湯 · 豬雜湯
A clear pork broth with an assortment of offal such as tongue, stomach, intestine and liver.
What it is
Order 綜合 ('mixed') at a pork glass-noodle stall and you get a bowl of broth with several cuts. A bowl at Fang De in Kaohsiung holds pork tongue, stomach, large intestine and the meat attached to the liver (肝連).
How it is made
Stalls keep a pot of pork broth hot and cook the cuts in it. A Ming in Tainan warms its offal in aluminium cups in a water bath to keep it crisp and tender. Fang De in Kaohsiung keeps its broth going over a charcoal stove under the cart.
How to eat it
Have it as the soup with braised pork rice, or ask for glass noodles or egg noodles in it.
