What it is

Pork tongue is a regular item on Taiwanese offal plates (hei bai qie). Cooked in the stall's broth and sliced, it is meaty and springy.

How it is made

Stalls cook tongues in the pork broth along with heart and liver, lift them out when done, and slice them to order.

How to eat it

It sits well next to noodles or glass-noodle soup. Michelin suggests grated garlic for a kick.

In Kaohsiung

Pork tongue is the most popular dish at Hsiu Ming in Cishan old town.
