An old Yancheng noodle shop, now run by the third generation, serving noodles or rice noodles in a rich pork-and-chicken broth with plates of sliced pork offal on the side.

Rice noodle soup
The broth starts with blanching pork heart, liver and tongue, then a whole chicken simmers in it, with bamboo shoots in summer and daikon in winter. Shallots fried in lard go on last. Yellow noodles or a dry version are also on offer.

Sliced pork offal
Pork lung, tongue, intestine and skin from the same stock pot, briefly blanched and cleaned well so there is no gamey taste.
