Wa-gui (savoury steamed rice pudding)
Rice batter is ground fresh every morning and steamed with pork, braised egg and fried shallots, then topped with a sauce of soy, Chinese herbs and garlic. It stays pale and firm, unlike the darker Tainan style, and comes with a flat bamboo pick for cutting it.
